Centre V -  A Signature Dining Experience To Debut at The New Arrabelle at Vail Square, A RockResort

Brasserie-Inspired Restaurant Opens its Doors December 2007

Vail, CO (August 23, 2007) – Centre V, a Parisian-inspired brasserie offering traditional French fare, will open on December 22 as a part of the new luxury RockResort, The Arrabelle at Vail Square.  With the culinary renaissance that Vail is currently experiencing, Centre V, created by Chef Thomas Salamunovich of Vail’s famed Larkspur restaurant, will be a much-anticipated addition to the region.  The restaurant will welcome diners two weeks prior to The Arrabelle’s January 5, 2008 opening.

“At Centre V we are dedicated to finding the pure soul and essence of traditional French cuisine,” said Chef Salamunovich.   “By offering meals made with integrity, time and care, one can now come to Vail and indulge in traditional cuisine based on centuries-old concepts, invigorated by quality ingredients,” he added.

Upon entering Centre V, the brasserie ambiance is apparent with rich, burnished wood, a zinc bar, exposed brick walls and 15-foot groin-vaulted ceilings that convey a sense of Old World charm. A fruits de mer shucking station at the entrance to the dining room illustrates the immediacy and freshness of the food, while wooden banquettes in the bar and dining areas encourage intimacy and relaxation. Diners, enjoying either the summertime outdoor area or relaxing inside, will linger at their tables while gazing out at the majestic mountain views.

Classic brasserie fare that is nourishing and unpretentious style is what Centre V is all about.  Internationally-trained chef Salamunovich will serve the sort of home cooking that puts people at ease while offering the creative interpretations that adventurous diners expect. The robust lineup will include poulet rôti, onion soup gratinée, cassoulet, moule marinière, as well as revolving plats du jour that will feature such classics as duck confit, salade niçoise and coq au vin. 

Centre V’s menu will change seasonally to incorporate the freshest ingredients.  Breakfast will include a varied menu with sliced meats, fine cheeses and hot items, while lunch will be more casual with a rustic flair with items such as gourmet quiches and tartines (open faced sandwiches).  For dinner, guests can choose from plats principaux including duck liver mousse, steak pommes frites, a charcuterie plate or salade Lyonaise.   Centre V diners can round off the meal with classic desserts like crème brulée and fresh crêpes created on an authentic crêpe machine.

Guests can also enjoy delicacies from Centre V in the privacy of their own luxurious rooms.  In-room dining at The Arrabelle, served on fine china, will be available 24/7 and will offer various menu items from the restaurant as well as distinct, refined dishes that match the elegance of the hotel.

Chef Salamunovich has not limited his culinary identity and is comfortable as long as he is producing authentic fare.  His experience includes a seven-year tutelage of first Jeremiah Towers at Stars and later Wolfgang Puck at Postrio Restaurant.  On a year-long French tour he worked and learned in the kitchens of three-star restaurants Paul Bocuse and Lucas Carton.  In his time in Vail, Thomas was executive chef of Sweet Basil as well as he creator of several other restaurants.  He is chef and owner of the famed Vail restaurant Larkspur, which elevates regional American fare.
